My girlfriend lives about four and a half hours away and has had a really difficult week. She has hinted that she'd love one of us to show up unexpectedly, so I'm hoping to surprise her when she gets home from work. We both use iPhones and share our locations, though, and I'm worried she'll see me traveling toward her through Messages or Find My. Is there a temporary way to prevent my trip from appearing without creating an obvious notification or making her suspicious?

Airplane mode or powering down the phone would prevent live updates, but the last recorded location may remain visible and your sudden silence could stand out. Also, don’t use a phone while driving—set up navigation before you leave or use a separate device safely.
The simplest option is to leave your primary phone at home and use a separate device for navigation, provided you can still handle important calls safely. You could also arrange a normal explanation for being unreachable, but complicated excuses tend to create more suspicion than they prevent.
If you have another Apple device, such as an iPad or old iPhone, you may be able to set that device as the one sharing your location and leave it at home. Test the setup beforehand, keep it connected to power and Wi‑Fi, and make sure you understand what location Find My is actually reporting. Otherwise, turning off location sharing or location services may be the only straightforward option, but that could show as unavailable and give away the surprise.
You can usually adjust location access for individual apps instead of disabling it for the entire phone, but test everything before leaving so you don’t lose navigation unexpectedly.
