The Ryzen 5 7600 is a capable gaming processor, but it is more of a starting point for serious modeling and animation. If your workload involves complex scenes, rendering, or frequent video work, a processor with more cores would make a noticeable difference. For both of your main uses, I would avoid an 8GB graphics card if possible.
