I currently use a 22.5-inch 1920×1080 monitor from about 60 cm away, and the size and viewing distance feel comfortable. I'm considering moving to a 27-inch monitor, but I would probably need to place it farther back—perhaps around 80 cm—to keep a similar field of view. Would the larger screen improve immersion, or would the lower pixel density make the image noticeably worse? I'm specifically asking about staying at 1080p rather than moving to 1440p, partly because my GTX 1050 Ti may struggle with higher-resolution gaming and viewport rendering.

It can work, but the answer depends heavily on your eyesight, viewing habits, and tolerance for visible pixels. One person may find a 27-inch 1080p display perfectly comfortable from roughly 64 cm, while someone else may immediately notice the softness. Try to view a similar monitor at the distance you would actually use before buying. A larger panel will not automatically provide more immersion if you have to move it back.
If you want to stay at 1080p, I would either keep your current monitor or choose a 24-inch model only if you need a replacement. A 27-inch 1080p display gives you a physically larger image, but not more workspace or detail. A 27-inch 1440p monitor would be the meaningful upgrade, though you could lower the game’s render resolution when necessary; whether that works well depends on the game and your graphics card.
At 27 inches, 1080p has noticeably lower pixel density than your current display. It is usable, but text and fine details will look softer, and you do not gain any extra desktop space because the resolution is unchanged. For 1080p, the 24–25 inch range is generally a better balance. If you move the 27-inch screen farther away, it may also appear roughly the same size in your field of view, reducing the benefit of the upgrade.
