I have about $2,000 USD available to upgrade my gaming PC and would like it to remain capable for several more years. My priority is consistent performance rather than maximum visual quality—I'm aiming for dependable 60–120 FPS across a wide range of games.

For a major gaming upgrade, I’d move to an AM5 platform with an X3D processor, 32GB of DDR5-6000 memory, and a Radeon RX 9070 XT. That gives you a much stronger CPU platform for minimum and average FPS while also providing a substantial GPU improvement. A slightly faster X3D chip is an option if you have room in the budget, but the value is usually worse. Check local bundle pricing before buying everything separately.
Your graphics card is the first part I’d replace, especially if you play at 1440p or higher. An RX 9070 XT would be a sensible upper-end match for this budget. The 10700K can still perform well, but it may limit frame rates in CPU-heavy games, particularly when trying to stay near 120 FPS. If you mostly play at 60 FPS, you could keep the current platform and spend more of the budget on the GPU.
Before replacing anything, update the motherboard BIOS and make sure the memory profile and CPU settings are configured properly. The 10700K and 6700 XT still have plenty of life left when tuned correctly. If you do keep the current system temporarily, adding a good NVMe SSD for Windows and frequently used programs would be a worthwhile quality-of-life upgrade, while using the existing 2TB drive for games.
