One option you could try is using Google Analytics. It might help you get a better sense of your email engagement.
I've read that a common technique is embedding a 1x1 pixel image in your email that links back to your server. When someone opens the email, the image loads from your server, and you can track when it gets accessed. That should give you an idea of when they actually read it!
