I wouldn't recommend the 5070. Instead, consider getting a 9070XT for better performance. Just keep in mind that the price difference can vary a lot.
For your $2,000 budget, make sure you're including a solid GPU like the 5070 Ti or at least the 9070 XT; anything else might underperform for gaming like you want.

Your build looks pretty solid! If you want an all-white theme, check out the MSI white Ventus card for $660. It'll cost a bit less than your current PNY card, but do note you'll sacrifice some cooling effectiveness.
You're right about the value, but the 5070 is actually priced better right now compared to the 9070XT, especially at retail.
