I recently got a new graphics card that requires a 12-pin connector. It came with an adapter for my 6+2 pin PCI-E cable, but I've noticed the adapter needs two cables to work. Do I just need to buy another 6+2 PCI-E cable and connect it to my power supply to use the adapter? I believe my power supply should be sufficient for my setup.

Just a heads up, modular cables aren't universal, so you need to ensure that any additional cables you buy are compatible with your specific power supply model. It's not as straightforward as just picking up any PCI-E cable.
Your power supply should come with all the necessary cables. Do you only have one 6+2 PCI-E cable available?
I only have the one cable connected to my GPU, though.
From what I see, there are several slots on my PSU for more cables.
