I'm planning to upgrade my current system, which has a 1080 Ti. I'm considering two options: the 5070 priced at 610€ and the 9070 at 680€. My CPU is currently a 5500, but I intend to upgrade to the 5700X3D soon. I typically game at a resolution of 2560x1080. Given the difference in VRAM, is it worth spending the extra money for the 9070 considering my resolution?

I have the 9070 paired with a 5700X3D, and it's fantastic! You could easily game at 1440p with it. Your next step should definitely be a quality 1440p monitor.
I personally went for the 5070 as well, and I'm upgrading to the 5700X3D too. They pair really well together!
At 2560x1080, I think 12GB of VRAM is more than enough for your needs. You should be good with the 5070.
If you're into ray tracing, the 5070 might be a better bet since games are adopting it more. That said, 12GB should suffice for your current resolution, but if you plan to upgrade to a higher resolution later on, you might want to lean towards the 9070.
