I'm about to build my new PC and already have Windows installed on a flash drive. Before I get rid of my old PC, I wanted to see if there's anything else I should take from it, aside from the GPU. Are there any drivers or files I should download first?

It seems like you're a bit vague about what you're really asking. If you don’t know what you need, it’s tough for others to help. But if it’s just about the GPU, you might not need anything else from the old PC unless you have specific files or drivers.
Before you tear everything down, do a full backup of all your drives just in case. Make sure those partitions are still mountable, and maybe keep a copy of that backup elsewhere. It's better to be safe!
If you're planning on selling the old PC, make sure you format the drives. You can use the Windows installer to do this, or for added security, use a tool like DBAN to wipe everything if you're really worried about data recovery.
You'll definitely want to grab any storage drives you have in your old PC. I pulled out my SATA SSDs to use as data and backup drives in my new setup. Also, don't forget about your keyboard and mouse if you want to save some cash!
