I'm upgrading my PC for the first time since 2020 and I've decided on the Ryzen 7 9700X for my CPU. I'm now on the lookout for a mid-range GPU that falls between $500 and $600. Should I stick to this budget or consider spending more on a better GPU even if that means downgrading the CPU a bit? I'm mainly using my setup for gaming and programming, so I want to make sure I don't miss out on good performance.

A solid pick would be the RTX 5070. It's pretty much available for around $550 at Best Buy, and for that price, it's an excellent choice at MSRP.
You should definitely consider what resolution and refresh rate you're aiming for. If you're gaming at 1080p with a refresh rate of 185Hz, you'd want a GPU that can keep up easily.
Yeah, I've seen that card too! Sounds like a good deal.
