I recently upgraded to an RTX 5070 with 12GB of VRAM and ran it through FurMark for about 10 minutes. The temperature stayed around 79–81°C. Is that unusually hot for a modern 50-series card, or is it within the normal range? My previous GPU was a GTX 1060, so temperatures around 80°C feel high by comparison. I'm currently using the fans included with my Antec CX300 ARGB mid-tower case and am wondering whether I should buy additional fans or change the airflow setup.

You probably don’t need to buy more fans just because of an 81°C FurMark reading. Three properly positioned case fans should be enough for an RTX 5070 in a reasonably ventilated case. If you want to improve airflow, you could move a front intake fan to the lower-front or bottom position so it feeds cool air directly toward the GPU.
Those temperatures are safe, especially during a demanding stress test like FurMark. NVIDIA cards can generally run up to the high 80s before they start reducing performance to control heat. Gaming temperatures are more useful to monitor than a FurMark result, since FurMark is an unusually heavy workload.
The result is acceptable, though the exact temperature depends on your room temperature, the specific card cooler, fan curve, and case airflow. I’d only be concerned if it stayed near those temperatures while idle or reached the upper 80s during normal gaming. Undervolting is also worth considering because it can lower power use and temperatures with little or no performance loss.
