I have a Ryzen 7 5800X3D on the way and currently use a be quiet! Pure Rock 3. Will this cooler be sufficient, or should I wait until I can buy a larger air cooler or an AIO? I mainly play games and watch YouTube, so I won't be doing video editing, rendering, or other heavy workloads.

It should work fine for gaming and normal use. The 5800X3D tends to run warm because of how the cache is layered over the chip, so temperatures may look higher than expected, but that doesn’t automatically mean the cooler is inadequate. Avoid overclocking and keep an eye on temperatures during your first few gaming sessions.
You should be okay. The 5800X3D often uses roughly 75–85 watts while gaming and can reach around 120–130 watts in demanding all-core workloads. Even a midrange tower cooler has been able to keep this CPU below 80°C in gaming for some users, although stress tests may run warmer. If you already own the Pure Rock 3, I’d try it first rather than delaying the build.
The Pure Rock 3 is probably right around the reasonable limit for this processor under sustained full-core loads, but gaming power consumption is generally lower. A larger air cooler would give you more temperature and noise headroom, though an AIO isn’t necessary. A good thermal pad can also be a convenient, long-lasting alternative to regular paste.
