I bought an RTX 5070 Ti OC Edition and am wondering how aggressively I can overclock it for long-term gaming without causing excessive temperatures, damaging the card, or significantly reducing its lifespan. I'm especially interested in whether I should enable and disable the overclock as needed or leave it running continuously.

Manual overclocking can take a lot of time for relatively small gaming gains. If you need substantially more performance, moving up to a higher-tier card is the simpler option, although the price difference may make tuning the 5070 Ti worthwhile in your case.
A properly configured GPU overclock can usually be left enabled for the card’s useful lifetime. Many people have run overclocked GPUs for eight years or more without failure. Keep an eye on temperatures, crashes, graphical artifacts, and fan noise, and reduce the settings if any of those become a problem.
Temperatures are easy to monitor, and these cards generally handle sustained temperatures around 80°C or a little above for years when the cooling setup is adequate. Extra power and voltage are the bigger concerns for component degradation. A good approach is to try undervolting first: you may get similar or better performance with less power, heat, and fan noise. Once it’s stable, you can cautiously raise the power limit if you still want more performance.
The OC label usually means the card already has a small factory overclock; it doesn’t necessarily mean the card is designed for extreme manual overclocking. A mild additional boost generally won’t cause problems, but heavy overclocks and especially higher voltage can increase heat and long-term wear. You normally don’t need to switch an overclock on and off during everyday use—just keep temperatures and stability under control.

The next tier has a pretty poor price-to-performance ratio for me—the 5080 costs about $600 more—so I’d rather tune the 5070 Ti to get closer to that level of performance.
