I'm considering the ASUS Dual RTX 5060 Ti and would like to hear from people who have used it. How are the fans in practice, especially the bearing or motor noise? Does it produce noticeable coil whine, and how smooth is the fan behavior when zero-RPM mode switches the fans on?

The exact model usually doesn’t change gaming performance, so I’d choose the least expensive card with the features you want. A larger triple-fan cooler may run slightly cooler and quieter, but this GPU only uses around 140–160 W in games, so a dual-fan cooler should handle it well. Coil whine is mostly luck of the draw. If you buy one, get the 16 GB version; the 8 GB model is difficult to recommend. If you don’t need CUDA, a 16 GB 9060 XT may offer similar performance for less money.
The ASUS Dual sounds like a sensible option if you prefer a gentler fan ramp. Some larger cards can have annoying bearing or motor noise, and a few jump abruptly from zero RPM to roughly 1100 RPM when the fans start. A transition to around 700 RPM should be less noticeable, although individual samples can still vary.
I agree that a larger cooler probably won’t make much difference here. Since the card’s power draw is fairly low, the ASUS Dual should be able to stay reasonably cool and quiet without a massive heatsink.
