If the budget allows, I'd also like it to handle Adobe Illustrator, InDesign, Photoshop, and possibly Blender or 3ds Max.

The RTX 5070 is a reasonable match for high-refresh 1440p gaming and should handle your listed games well. A used RTX 4070 Super could be worthwhile only if it is substantially cheaper and comes from a trustworthy seller with proof of purchase. It is slower overall and has the same 12 GB VRAM capacity, so don’t pay close to new 5070 pricing for it. For Blender and Adobe applications, Nvidia is a sensible choice because of CUDA and broad software support.
The overall platform is strong, but the memory price looks completely out of line. A normal 32 GB DDR5-6000 CL30 kit should usually cost far less than €434.90, so double-check that listing before ordering. DDR5-6000 with EXPO is a good target for the 7800X3D, but a cheaper 5600 or 6000 kit would barely affect gaming performance. The 7800X3D is excellent for games, although it may be more CPU than you need if the graphics card remains the limiting factor.
The build is usable, but the SSD and memory costs are the first things I’d revisit. A less expensive 1 TB PCIe 4.0 NVMe drive will feel nearly identical for gaming, while 2 TB may be more practical if you install large games and Adobe projects. If you regularly work with large creative files or complex 3D scenes, consider 64 GB of RAM later; 32 GB is fine for gaming and normal Adobe use.
You can save money by replacing the 360 mm liquid cooler with a good air cooler. The 7800X3D does not require a large AIO, and a quality tower cooler will be quieter, simpler, and less likely to develop a pump problem. Also verify that the processor is an official boxed product rather than an OEM or tray unit, since warranty and included accessories can differ.
