I'm planning to replace my RTX 3070 with an RTX 5080 and currently have an Intel Core i7-14700K. Will this processor be powerful enough for gaming at 1440p, or should I expect the CPU to limit the graphics card's performance?

You’ll be fine, particularly if you’re using DDR5 memory. A CPU bottleneck is more likely in very CPU-heavy games, competitive titles at low settings, or when trying to push extremely high frame rates. For normal 1440p gaming, the 14700K has plenty of performance.
Yes, the i7-14700K is a very strong match for an RTX 5080. At 1440p, most games will be limited by the GPU, especially if you use higher settings or ray tracing. You should not need to upgrade the CPU.
It’s a good pairing. Older processors such as the 12700K and 13600K can also run an RTX 5080 well, so the 14700K should have no trouble. You might only notice a difference at 1080p or 1440p with low settings and a very high-refresh display; at higher quality settings, the workload shifts more toward the GPU.
The main exception is a game like Tarkov, where the CPU can be fully loaded while the GPU is underused. You can still get great performance, but you may need to adjust settings or accept a lower frame rate.
