I have a 2017 MacBook and am wondering whether leaving it in a freezer for about five hours could damage it. What risks would there be, especially when taking it back out?

The freezer itself may not immediately destroy the laptop, but the temperature change afterward is risky. Even if you seal it in a bag, humid air already inside the laptop can condense as it cools. Letting it warm up completely before powering it on reduces the risk, but freezing it is still a bad idea.
The main danger is condensation, especially when you remove the cold laptop and expose it to warmer air. Moisture can form inside the case and cause short circuits or corrosion. There’s no real benefit to freezing it, so I wouldn’t do it. If it’s overheating, clean out the fans and vents instead.
