I've been eyeing the RX 5700, which seems like a solid choice for the price, but I'm here to ask for advice on whether there's a better option available in the used market. The PS5’s GPU is roughly equivalent to an RX 6700, with slight changes that make it perform really well. You should look for a GPU that is at least on par with the RX 6700 or even better. A 5700 is simply not going to cut it.
Honestly, the PS5 has a GPU that’s pretty comparable to a Radeon RX 6700 (non-XT), so the 5700 will definitely fall short in performance.
