I've been experiencing an issue where my Apple Wallet is charging my iCloud subscription instead of the payment method I initially set. This has happened twice now, and I've been charged a total of $10. I have multiple subscriptions and really need to switch two of them to a different payment method. Is there a way to manage or change these payment methods for my subscriptions?

Keep in mind that your Apple account charges always prioritize Store Credit first, then the payment methods in order from top to bottom. Just adjust the order if you want to prioritize a specific payment method for future charges.
You can't assign different payment methods to specific subscriptions. Apple charges from the payment method listed first in your account. Check the order of your payment methods in the settings; just make sure the one you want to use is at the top! If it can't process that one, it will move to the next one down the line.
So, if you've subscribed to services through the App Store and want them billed differently than iCloud, you can't do that directly. You'd likely need to cancel those subscriptions and re-subscribe with those services separately to get a different payment method.

Oh, I see! I thought they could bill different subscriptions to different cards. Thanks for clarifying!
