Is replacing a GPU really a roughly 10-minute job? I'm curious how long it usually takes in practice and what factors can make the process faster or slower.

Driver changes are the main extra step. Switching between graphics card brands is a good reason to use Display Driver Uninstaller in Safe Mode, then install the new drivers after the replacement. That can turn a five-minute hardware job into a ten- or fifteen-minute process.
The biggest variables are cable routing, case size, and the card’s power requirements. A larger or more powerful GPU may need different cables, a new 12V connection, or some rearranging inside the case. In a cramped case, or if you need to remove a cable cover, the job can easily take thirty minutes or more.
It’s also a convenient time to clean out dust and the GPU fans. Just keep the fans from spinning freely while blowing compressed air at them. Once cleaning and cable management enter the picture, a simple swap can unexpectedly become an hour-long maintenance session.
