I'm heading off on holiday for a month and won't be using my MacBook Air and iPad (10th gen) during that time. What's the best battery charge level I should leave them at when I completely shut them off before my trip?

Keeping the battery between 40% to 60% is perfectly fine for a month. It’s not a long time, so they’ll be okay!
Honestly, it’s not that serious. Just leave them however they are now or charge them a bit—it won’t make much difference in the grand scheme of things.
I’d recommend around 50% and make sure to store them in a cool place. That should be just fine!
You're good to go as long as you charge them fully or to whatever percentage you regularly keep them at. Li-ion batteries don't lose charge too fast over a month.
I let my Pixel 5 sit turned off for 4 months and it still had 56% left when I powered it back on!
