I currently have Windows installed on a 250GB SSD, but I've added a 4TB M.2 drive and want to transfer everything over to it. I'm considering creating a system image on an external hard drive to reinstall Windows on the M.2 and restore all my files there. Will this method work? Also, is there a simpler way to achieve this?

Fresh installs give you a clean slate, and it’s something I suggest doing every year for optimal performance.
Honestly, it's often easier to just do a fresh install on your new drive and then transfer your files. Imaging can be a bit unreliable these days, especially with issues like TPM.
I successfully used Samsung Magician to clone my old SSD to the new one. It was a smooth process, highly recommend it for a hassle-free migration.
Using an external enclosure that supports disk images might work too, but make sure you can fully utilize the 4TB capacity once it’s migrated.
If you want to avoid a fresh install, check if the manufacturer of your M.2 drive has cloning software available. I recommend Clonezilla if you're comfortable with a bit of command line work.
