I currently have a 10GB RTX 3080 and mainly game at 1440p. I found a local deal on a Sapphire RX 7900 XT for $400, and I expect to sell my 3080 for around $300. That would make the upgrade cost roughly $100 out of pocket. Is the 7900 XT a worthwhile upgrade at that price, especially considering its higher performance and 20GB of VRAM?

Absolutely. For only about $100 after selling the 3080, the RX 7900 XT is a strong upgrade. It has significantly more VRAM and is much faster in traditional rasterized gaming, which is especially useful for newer games at 1440p. The main area where the 3080 can still compete more closely is ray tracing.
The RX 7800 XT would be closer to an RTX 3080 and probably wouldn’t be worth switching to for much money. The RX 7900 XT is a different story: it offers a clear performance increase, 20GB of VRAM, and better longevity for a net cost of only $100.
I’d take the deal. Even if you only care about 1440p, the extra VRAM and roughly higher-end performance make the 7900 XT a worthwhile step up. At a $100 difference, there’s very little downside as long as the card is in good condition and the sale of your 3080 goes as expected.
