I'm swapping out the power supply in my old PC for a newer model. The problem is that modern power supplies usually come with fewer Molex cables. Are SATA to Molex adapters safe to use, or would it be better to use a Molex splitter instead? I found a splitter on Amazon, and I'm wondering if that would be a more reliable option.

I was actually in a similar situation with my Chieftec TPS-500S, which has three Molex outputs. I decided to go direct Molex for my GPU to avoid any issues. I split one Molex to power an HDD and FDD, and another for two DVD drives. I’m pretty cautious about power distribution, so I’d recommend following that route if you're dealing with anything sensitive. Just make sure not to overload the cables!
