I just built a new PC with a 9070XT GPU and an Intel i5 11400F CPU. While playing Valorant at 1440p, I'm getting around 180-200 fps. I'm considering upgrading the CPU, but I'm wondering how significant the bottleneck really is. Would switching to a Ryzen 5 9600X make a noticeable difference? I'm using a Gigabyte B560M motherboard, so I'm also curious about any compatibility issues.

180-200 fps is pretty solid, but if you're using a 300Hz monitor, then yes, you'll want more. A higher refresh rate monitor will need you to push more frames to fully utilize it.
