I'm currently running an AMD Ryzen 7 5800x, an RTX 3060TI, and 32GB of RAM at 3600MHz. Most of my gaming time is spent on Escape from Tarkov, and I'm considering an upgrade. However, I'd like to stick with my AM4 motherboard for now but I'm not sure which CPU to go for. I've heard a lot about the 5800X3D, but it seems to be either out of stock or priced ridiculously high. Also, I'm thinking about getting an RTX 5070 but I'm concerned about potential bottlenecking. Any advice or tips would be greatly appreciated!

Trust me, go for the 9070XT. Upgrading on AM4 is pretty limited. The best you would get with the 5800X3D is just modest performance gains.
If you're gaming mainly at 1080p with some 1440p, I’d suggest going with the RTX 5060TI with 16GB. I recently upgraded my AM4 setup with a 5060TI and it's been great with my Ryzen 7 5700X. I'm planning to move it to my future AM5 build when I get around to it.
The 5800X3D is no longer in production; the 5700X3D is available but it won't be a massive upgrade from the 5800X. Your current GPU is likely your limiting factor unless you're playing really high-speed games at 1080p. I recommend saving your money to get something like a 9070, 9070 XT, or 5070Ti instead. Your CPU setup should be fine for now.
Honestly, unless something major breaks, you might be fine sticking with your current set-up for a bit longer. Upgrading to another CPU on the AM4 platform probably won't offer enough improvement, and saving for an AM5 platform could be a wiser long-term choice. As for the GPU, while a 5070 will provide better performance, it will create a slight bottleneck with your CPU, but it shouldn't be too noticeable during gameplay.
I just upgraded to a 5800XT from a Ryzen 5 3600, and I got a 5070. The X3D options are just far too pricey—definitely not worth it.
