I'll initially be gaming on a basic 1366x768 60Hz monitor. Which GPU would make more sense for this setup?

The RTX 5060 is worth considering if you plan to upgrade to a higher-resolution monitor later. Its DLSS support can be useful at 1080p and beyond, although it is less important at 1366x768. For your current display and regular rasterized gaming, I’d lean toward the 9060 XT unless the Nvidia features are especially important to you.
You could also look at the Intel Arc B580, since its 12GB of VRAM gives it more headroom than either 8GB card. Just make sure your system has current drivers and that the games you play are well supported.
The RX 9060 XT is generally the faster card, averaging roughly 7–8% higher FPS in standard gaming. At 1366x768 and 60Hz, either card should handle your monitor well, so the difference may not be very noticeable. If the 16GB version is affordable, it would be the better long-term choice because newer games are increasingly demanding more VRAM.
