Suggestions for Budget Home Server Build

I'm planning to build a home server PC on a tight budget that will host various services like a Git server and Jira. I'm also thinking ahead to use it for training AI models, as I plan to add two 5060 Ti 16GB GPUs in a few months. Currently, I have a Ryzen R9 9900x CPU that I'll be reusing from my gaming setup (I'll be switching to a 7800x3d for gaming). I need help choosing a budget-friendly but quality motherboard, RAM, PSU, AIO cooler, storage, and case.

The motherboard specifically needs to support dual PCIe 5.0 slots at 8x for my future dual GPU setup. The one I've looked at supports 1x PCIe 5.0 16x and 1x PCIe 4.0 16x, which I believe should work out to what I need.

Here's the current parts list I have:
- Motherboard: ASRock Taichi Lite B650E — 350€
- RAM: Kingston Fury 128GB 5600 — 365€
- PSU: BeQuiet! Dark Power 13 850W — 250€
- AIO: Corsair Nautilus 360 RS — 130€
- Storage: Samsung 990 Pro 4 TB — 300€
- Case: NZXT H7 RGB — 180€

The total comes to around 1575€, which feels a bit steep for my budget. Any advice on alternative parts or ways to save costs would be greatly appreciated!

I took a quick look around for AM5 motherboards and the only one that seemed to support 2-way setups is the MSI MEG Godlike X670E, but it's super pricey—saw it on eBay for about $800. Your best bet might be to switch to an LGA1700 setup with a Z690 or Z790 board, which can handle PCIe 5.0 in x8/x8 or x16/x0 configurations.

Hey! Just a heads up about the motherboard: it might not quite do what you think with the PCIe slots. The ASRock Taichi Lite B650E is advertised a bit funky. If it's only PCIe 4.0 for one of the slots, your second GPU could end up running at PCIe 4.0 x4. You might want to check out the Asus B650-Creator; it supports x8/x8 for two GPUs if that’s the direction you're looking at.
