Thoughts on My Remote Development PC Build?

Hey there! I'm building my first PC since 2011 and plan to use it to create a remote development environment for my MacBook Air M1. I'm thinking of installing a Linux distribution like Ubuntu or Debian and using JetBrains Remote Development. Stability is a must for me, and I definitely want to use Docker on it. In the future, I might add a GPU for model training, but that's not necessary at the moment. Also, I don't game, so I'm looking to avoid any parts known for issues. Thanks for the suggestions! About that SSD: isn't the Gen 5 drive twice as fast? Is it worth the extra $100? Also, do you think the PSU is too big for my case?
