I'm looking to switch to Linux as my operating system, but I'm not sure which distro would be best for gaming and also for tasks like programming, document creation, and video editing. Any recommendations?

Don't get hung up on which distro is best for gaming; it really varies. It’s a common myth that some distros are better for specific tasks. They mostly differ in update frequency and included applications. You can use any distro effectively.
I’ve tried Pop!_OS for gaming, and it’s pretty minimalistic and good for gaming. Although, I found the interface a bit annoying after a while, but that's just my personal taste.
CachyOS is a solid choice, and you could also look into Garuda or Mint for a good balance of gaming and general productivity. Just make sure your hardware can handle the apps you want to run.
Almost all the mainstream distros should be fine for gaming. With tools like Steam and WINE, it’s becoming easier to game on Linux. For programming or video editing, there are a few distros designed for that, but most general distros handle documents quite well with built-in office suites.
Consider checking out Nobara; I switched from Windows 11 a week ago and I’m really happy with it! Also, Bazzite is great for gaming and has all the necessary tools.
