I've had my RX 6800 XT for about a year, and it was a great deal! However, I didn't upgrade my CPU at that time since my needs were minimal. Currently, I'm running an AM4 setup with a Ryzen 5 1500X, which is quite outdated. I also have 16GB of RAM at 3200MHz and I'm considering whether I should double that. Lately, I've been mostly playing online MMORPGs and some single-player games, not really into shooters but I do play with friends occasionally. I'm looking for suggestions for a budget CPU upgrade as I'm planning to upgrade my monitor to 2K resolution soon. Thanks in advance!

I'd recommend the Ryzen 5600 or 5700 series. I run a 5600X paired with a 6750XT and it's been great! Just make sure you monitor your temps and performance during your upgrade.
If you can swing it, the 5600X or even the 5800X would be great options. They'll give you fantastic performance without breaking the bank. Just steer clear of G models; they have less L3 cache which can hurt performance. If you're in the U.S., I see the 5600 is pretty affordable on Amazon right now.

If you're on a budget, the Ryzen 5600X is a solid choice! You mentioned you're finding it around $115 used, which is great. The 5700X for $157 new is also a good option, but it might be overkill unless you're really pushing it. Both should work well without causing a bottleneck when you game at 2K.
