I have an older setup with a GTX 1060 6GB and an i7 7700K paired with 32GB of DDR4 RAM. It's been about nine years since I last upgraded my GPU, and I've noticed that it's my biggest bottleneck while gaming. I mainly play story-driven games like Baldur's Gate 3, Battlefield 6, Dead by Daylight, and others. I'm looking to upgrade to the best GPU I can afford, considering my CPU will be kept until it is completely outdated. I'm trying to decide between the 5060, 3070, or Radeon 9060, or perhaps another option within a budget of $200-350. Any recommendations?

If you push your budget a bit, a 9060 XT with 16GB would be a killer choice. Just keep in mind that your CPU might still hold back its full potential.

Definitely consider snagging a Ryzen 5 5600 and a B550 motherboard. If you sell your current components, you can put the rest of your budget towards a decent used GPU. For 1080p gaming, that combo should serve you well without hitting too many performance ceilings.

Honestly, that quad-core CPU is going to hold back any modern GPU you choose. I’d suggest getting a used AM4 setup and then upgrading to a better GPU afterward. You can keep your DDR4 and pair it with an AMD Ryzen 3600 and a cheaper B450 board for a reasonable upgrade path.
