I'm considering buying the RTX 5060 for around 300€ but I currently have a 500W PSU. I've also found a used RX 6800 available for the same price, but I would need to purchase a new PSU for about 80€. Should I go ahead and re-cable my entire PC with the new PSU, or is it better to just grab the RTX 5060?

You might want to consider something like the 4070 12GB instead. It's significantly faster and outperforms even the 5060 Ti. Plus, the RX 6800 has aged poorly, especially in terms of ray tracing and features that new games are using. It's better to look for cards that can handle the latest tech, especially with how important upscaling features like DLSS and FSR are becoming for performance and longevity.
I'd steer clear of GPUs with only 8GB VRAM these days. They're likely to struggle with newer games as we move further into 2025.
