I recently picked up a prebuilt gaming PC from Costco for $860, and I'm trying to decide on the right monitor to go with it. Should I go for a 1080p monitor or a 1440p monitor considering I have an RTX 5060?

I'd suggest sticking with 1080p since the RTX 5060 isn't a high-end GPU. Depending on your CPU, which I assume is compatible, keeping the resolution lower can help maintain better frame rates while gaming.
The build has an Intel Core Ultra 5 225F.
