I'm curious about the future of Intel-based Mac Pros, specifically the 2019 model. Since Apple is phasing out support for Intel Macs, do you think this model will continue to receive updates, particularly for macOS Tahoe? Or would it be more hassle to switch to a different OS altogether?

As far as I know, updates for Tahoe will go on regularly until around 2028, when macOS 29 is expected to launch. After that, the updates will likely cease.
Tahoe will be the last macOS update for the 2019 Mac Pro. I expect it will still get security patches for a few years after that, but major updates will stop once Tahoe is done.
You could consider using a legacy patcher from GitHub to install newer macOS versions, but performance might drop. I've successfully done it with previous Macs, going ahead by three versions without too many issues. Just keep in mind that with Apple discontinuing Intel support, newer OS versions might not work well, even with the patcher.

True, but since Apple isn't including Intel code in the latest versions, you might face challenges running those newer updates even with the patcher.
