My mother-in-law got her phone updated to a beta version by a coworker who thought she was just helping her make her phone cooler. Also, when the next official update arrives, can she just update her phone like normal to get rid of the bugs?

Nope, when it comes to the public release, it needs to have a version number higher than the beta for it to replace it. The best options are to either reset her phone after backing up her data via iTunes or wait until the official update comes out in September or October. Just keep in mind that she can't just update to remove the bugs without doing some extra work.
Unfortunately, if the coworker didn't back up her phone before jumping to the beta, it's tough to downgrade and keep her data safe. The current beta version (iOS 26) has a build number that's lower than the future public release, so she can't just update to the next version directly to fix her phone. If she can get to a computer, a full restore will be necessary, and then she could restore her data from an iTunes backup if she has one. Otherwise, it's a waiting game until the public release in the fall.
