I'm building a gaming PC and I'm considering using the RX 9070 non-XT GPU along with a Ryzen 7 7800X3D CPU. Since I play demanding, new releases, I want to know if this combo will work well together.

Absolutely, that combo will work great for gaming! You'll have solid performance for those new titles.
I'd recommend going with a Ryzen 5 9600X to save some cash. It might handle your gaming needs just fine.
If you're looking for more cores, the Ryzen 7 9700X is also a good choice. The last-gen Ryzen like the 7000 series can still perform well because the 9000 series mainly offered efficiency gains.
