Treat your projects like a job: add features, promote them, and use them to showcase your skills. Blogging about your work can also help demonstrate your understanding and writing abilities. Basically, do the kind of work you want to get hired for, but in a public space!
If you're into games, consider making something with Pygame! Alternatively, you could explore web projects, though I personally prefer Node.js and React over Python for that—just a thought!
