I'm really frustrated with Apple right now. I had over 100 notes stored on my iPhone that weren't synced to iCloud. I had some notes on my iPad that were synced, but not the ones from my iPhone. Recently, I added another email to my Mail app settings, and to collaborate on a note, I enabled iCloud notes. I didn't confirm anything or change any other settings, but somehow now I can only see my iPad notes on my iPhone, which are the ones synced with iCloud. I'm confused. Did adding the new email cause my old notes to disappear? I didn't remove the previous email. Now I have two empty folders in my notes app along with an empty 'On My iPhone' folder. Those notes were incredibly important to me, capturing so much of my life. I also noticed that the Notes app is still taking up around a GB of storage, which adds to my confusion. Could this be a glitch? Are my notes hiding somewhere? Please help me out; I need to retrieve them at any cost!

I can totally understand your frustration! Adding an email shouldn't cause your notes to disappear, though. Sometimes a sync issue can create confusion. If you enabled iCloud notes, ensure you've switched back to the local notes section by adjusting your note settings. Also, have you checked if the notes are stored in the older email account?
You might want to try restoring from a backup if you have one, but I get that you mentioned not having an iCloud backup for those notes. Have you checked the ‘On My iPhone’ section in your Notes app? Sometimes they don't just vanish; they could be sitting there if you look in the right spot.
