I'm looking for tips on how to effectively back up SQL servers. Do you take backups of the databases separately, or do you do a full backup of the OS at a different time? How do you manage your backup schedule?

I usually handle it this way: I do incremental DB backups every couple of hours, a full backup every night, and for the OS, I back it up weekly. Works well for me!

If you're using Veeam, consider taking a synthetic full backup weekly, like you mentioned for the OS, and incremental backups nightly. That’s what I've found to be best!.

I personally do a nightly OS/Host backup with a synthetic full backup weekly. I also like to have hourly incrementals in place to ensure no data is lost.

I’m not a DBA, but in my experience, restoring SQL servers can be tricky. It’s best to have a complete server backup but also keep a file level backup of your latest .bak files, just in case the restore process has issues. Better safe than sorry!
