Why can I unfreeze my PC by pressing the power button?

So, I'm working on something heavy like After Effects, and it completely freezes up on me—100% CPU and RAM usage, unresponsive mouse and keyboard, but I can still hear music playing. After waiting a while, I tap the power button, and suddenly the computer begins a shutdown process, closing apps one by one. How does this happen? Is there some hidden power that allows my computer to unfreeze when I press the power button?
