Also, I'm curious if I should go for DDR5 RAM instead of DDR4. Will DDR4 feel too slow? Finally, would switching to a B580 be a better option than sticking with the 5060?

You should definitely consider getting an AM5 build and going for the Arc B580. It might give you better performance and future-proofing. As for RAM, DDR5 could be the way to go for enhanced speed.
What are you planning to use the PC for? If gaming is involved, knowing the types of games can help narrow down suggestions.
Mostly I'll play CS and maybe some Battlefield.
The lowest-spec Nvidia card I’d recommend this generation is the 5060 Ti with 16GB. If you can find the B580 or 9060 XT with 16GB around MSRP, those are solid options too. If you're open to it, checking the used market might get you some good deals, but keep in mind there won't be any warranty and it might take some extra effort.
I'd suggest looking at either the 5060 Ti or the 9060 XT for your GPU. They're both great choices depending on what you can find.
