I'm having a bit of trouble figuring out how to untrust an app on my iPhone that I previously trusted for work. I found some advice suggesting I should reset the Location and Privacy settings, but when I try to do that, it looks like it will reset my entire iPhone, which I'd really like to avoid. Has anyone dealt with this before?

It seems like you're trying to untrust an app, right? If that's the case, you might have trusted a certificate. Resetting just the Location & Privacy settings shouldn't wipe your data, but it'll restore the trust prompts as if it were the first time connecting. Check the Apple Support page for more details on it. It's a common step that helps fix trust issues without a full reset.
I get what you're saying! When you hit that option for resetting, it can look a bit alarming as it hints at a full reset. Just to clarify, resetting Location & Privacy won't erase your data, but it will make apps ask for permissions again, which might help you with the untrusting process. Just take a deep breath and go for it!
