I'm building a new PC and I want to transfer my Steam games from my current computer to the new one. I've read that Steam has a feature to help with this. On my new M.2 drive, I plan to install both Windows and my games. What's the easiest way to do this? Should I install the new M.2 in my current PC, move the games over, then switch it back to the new PC and install Windows with the games already on it? Or is there a better method? I'm also worried about whether moving the M.2 drive to my current setup will cause any issues when I'm ready to install Windows on it in the new PC.

A good method is to install Windows on your new drive, then transfer the old drives into the new PC. You can then tell Steam where your games are, and it should automatically recognize them without needing to redownload.
Why not just log into Steam on your new PC and reinstall everything directly? It might be the simplest route if you're not in a hurry.
That's true, but my internet isn't great, so downloading all the games again would take forever. If I can't find an easier way, I'll consider that.
