I'm mostly gaming on my couch with my PS5, but I need a PC for work as well. I'd like to build a solid rig that can handle some gaming, particularly for single-player titles at 1440p with refresh rates between 60 and 120 Hz. Which GPU would be better for this, the 5060 Ti or the 5070?

I'd definitely go with the 5070. The 5060 Ti just doesn’t have the power for a good 1440p experience without relying on DLSS. The 5070 will give you much better performance overall.
If you're looking to emulate older consoles, the 5060 Ti is likely sufficient for that, especially if you're mostly focused on PS2 games. Just keep in mind that the 5070 may be better for more demanding titles.
It all depends on your budget! The 5070 is about 1.3 times stronger but costs about 1.3 times more. I built my first PC with an i5-12400F and a 5060 Ti, and I can run many games at 1440p, 60 fps without issues, and I wanted to keep my budget under $1000. Not everyone needs the top-of-the-line card.
The 5060 Ti is cheaper, and it can give a good experience at 1440p, especially if you're okay with adjusting some settings. Just be cautious with newer AAA titles as the 5070 might run out of VRAM more quickly.
