Best GPU Options for My New Build

Hey everyone! I'm upgrading from an older computer setup with an i7 2660, 12GB of RAM, and a GTX 750. I've already picked up a Gigabyte Eagle AX B650 motherboard, a Corsair 4000D case, and an Asus TUF Gaming 750W 80+ Gold PSU. I'm planning to get a Ryzen 5 7600, 32GB of DDR5 RAM, and a Thermalright Peerless Assassin 120 SE. For the first month, I'll stick with my old GTX 750 since I won't be gaming immediately. My question is: besides the GPU, is my build solid? Also, I'm looking for suggestions on used GPUs in the 300-350 euro range that can handle AAA games for the next few years. I'm considering the RX 6800 for its VRAM, but I've seen the 3080 priced similarly and I'm torn. I mainly game at 1080p and want this build to last. Any advice?
