I'm considering getting a SanDisk SSD Plus 1TB to replace my old 240GB SSD, which I plan to give to my dad. I want to know if this SSD will be a good option for installing games like Overwatch, Fortnite, SWTOR, Madness Project Nexus, and Fallout 4. Any insights on its performance for gaming?

It'll definitely work for your games, but be aware that it's known for slower transfer speeds. It's a budget option for a reason. What kind of budget do you have, and where are you planning to buy it from?
Keep in mind that the 2.5" SATA version is considered an entry-level drive and lacks DRAM, which can be a drawback. If you can, look into an M.2 NVMe option, as it's generally a better performer even without DRAM.
On a broad level, yes, it can be suitable for gaming, but it's a bit dependent on what you want to do with it. If you're looking to play multiple games at the same time, it might hold up, but there's a chance you could run into limits with storage.
