I have my eye on the 5060 Ti with 16GB or the 5070 with 12GB, but I'm open to other recommendations, or even waiting if the GPU market isn't stable yet. My setup has a 5700X 3D CPU, and while I'm aiming for 1440p at 144 FPS, I don't need ultra settings—high settings would be a nice bonus. My budget is around $750, and I prefer NVIDIA cards.

Between the 5060 Ti and the 5070, I'd definitely recommend the 5070. It's much more powerful and will get you closer to that 144 FPS target. The VRAM might not be perfect, but chances are you'll be looking to upgrade again before that becomes an issue.
Honestly, the 5060 Ti doesn’t outperform the 3080 by much. I’d say you should aim for at least the 5070 or the RX 9070 if you want good 1440p performance.
