I'm considering upgrading from my current Ryzen 5600 to a 5700X3D, but I've noticed that the availability is declining and the prices are sky-high—like 2x more than the cheapest AM5 CPU out there. If I go ahead and buy the 5700X3D, will I really see a benefit in the long run compared to just moving to an AM5 platform? Given that I'd only be spending about 100 bucks less than getting a Ryzen 7500F with a B650M motherboard, should I just sell my current setup and switch to AM5 instead?

Honestly, it doesn't make much sense to spend that much on an AM4 CPU when you can get into AM5 for just a bit more. Selling your entire old AM4 setup would reduce the cost further, making AM5 an easier option. You'll benefit from better core performance and faster RAM with AM5.
I think it's better to change platforms entirely! But instead of AM5, have you thought about going with LGA 1700 and getting an i5 14600KF?
Why switch to LGA 1700 when you already have an AM4 setup? That doesn't make much sense.
Based on benchmarks I've seen from Gamers Nexus, upgrading to the 5700X3D might not be worth it. In some games, the performance difference is less than 10 fps. If you can afford it, transitioning to AM5 makes more sense, but if money's tight, maybe saving for AM6 is better.
It sounds like the 5700X3D is either running low on production or just isn't being made in large numbers anymore, which is why prices are climbing. For nearly the same price as that CPU, you can snag a 6-core Zen4 plus a motherboard. Sure, you need new RAM, but selling your current AM4 setup could help with that cost. If you're watching your budget, a Ryzen 5600 or 5700 (non X/X3D) might be better. If not, go for the Ryzen 7500F or 7600 for modern performance and future readiness!
Lmao no, that's not a good move for someone already on AM4!
