I recently unearthed my old iBook G3 (M6497) and I'm looking to install a Linux distribution on it to give it a new lease on life. Can anyone suggest the best version of Linux suited for older hardware like this?

Debian has a version that supports older hardware! You can find the net-installer for PowerPC on their website. I’ve seen some cool videos about running PPC Linux on old Macs too, so that could be helpful. Check out Action Retro’s YouTube channel for reference!
Have you considered Adelie Linux? It’s one of the few distros that supports 32-bit PPC these days. If you’re open to alternatives, NetBSD could be worth a shot as well!
You might want to try Antix. I’ve got it running on a super old mini PC with 2GB RAM, and it works surprisingly well. It’s lightweight and makes for a great Pihole and VPN server! Hopefully, it’s compatible with your iBook too.
There are quite a few options for 32-bit PowerPC. You might want to look into Debian, Arch Linux, Gentoo, or even NetBSD. Each has its own strengths depending on what you're aiming to do with your iBook.
